Who cares that it’s Friday the 13th? We’re more excited that today is National Apple Pie Day! In recognition of this day celebrating that all-American dessert, we’re sharing this take on the tasty treat perfected by our Culinary Olympics team.
Apple Spring Rolls with Eggnog Crème Anglaise
6 Egg Wraps
1 Red Apple - Peeled, Cored, Sliced
1/8 tsp Cinnamon
1/8 tsp Nutmeg
1/4 cup Butter
1/4 cup Sugar
1 pt Eggnog
1/2 Vanilla Bean
4 oz Egg Yolks
5 oz Granulated Sugar
Sauté apples with butter, cinnamon, nutmeg, butter and sugar. When mixture is cool, wrap with egg wraps and deep fry until golden brown.
Heat Eggnog, sugar, and vanilla bean. Thicken with egg yolks. Pour over spring rolls and, if you wish, garnish with desired fruit.
