Thanksgiving is not a forgotten holiday here at Trilogy. We have a lot to be thankful for –most of all our residents! Each year, our campuses plan and prepare for large Thanksgiving celebrations. Each campus has its own special traditions, but all of them focus on family and friends. In addition to helping decorate, our residents are involved in meal planning through our Chef Circle program, where recipes can be swapped and discussed. The final spread is decided with the help of our dietitians.

This year, this sweet potato casserole recipe submitted by one of our residents proved to be a favorite! Unlike other dangerously sweet versions, this casserole is sweetened with applesauce! Sweet potatoes are rich in carotenoids such as beta-carotene, which is a precursor for vitamin A. Carotenoids are antioxidants which can help boost immune systems, fight inflammation, improve eye health and vision, and support healthy skin, all of which keep our residents happy and HEALTHY this holiday season.

Healthy Sweet Potato Casserole

Ingredients:

6 large sweet potatoes peeled and diced
¼ cup melted butter
¼ cup packed brown sugar
¼ cup unsweetened applesauce
½ tsp cinnamon
1 tbs orange juice
1 package of marshmallows


Directions:

Preheat oven to 350 degrees F
Drop potatoes in a boiling pot of water. Cook until fork tender, around 15 minutes.
Drain potatoes and mix with all ingredients.
Spread evenly in 9x13 in glass baking dish.
Top with marshmallows and bake for 25-30 minutes, or until marshmallows are golden brown.
